Congee (Jook)

When traveling around asia, i found that a lot of train stations and other places that sold breakfasts sold a thing called congee in a little metal pop can almost that had a spoon on top. Well, i wanted to make some for a breakfast and found a recipe, tweaked it and added my own toppings. Here is my recipe.
1 cup long grain white rice
9 cups water
1/2 t. salt
put all the ingredients in a pot and bring to a boil. Boil about 5 minutes and then lower the heat to medium or low (just so it won't boil over) and boil it about an hour and a half and then start checking it more often during the last half hour so it won't stick. I had to turn up the heat in the last half hour. Just make sure there isn't any water on the top that hasn't had rice in it (or something like that) so it's all the way through. You're done! Super easy and a great breakfast food.

shiitake mushrooms
chopped button mushrooms sauteed with onions
kimchee
soy sauce
hoisin sauce

Better Blogger +today what i ate

Italian Plums

Wish I could say I was a better blogger, but really, Im not. School has gotten really busy and since i'm in cross country, it's been really hectic going to practices and competitions. It is a lot of fun and I am enjoying it greatly. I still have my camera close to my side taking pictures. :D I just need to upload them and I'm good. You know how that goes though.

Today what I ate?
1/2 c. rice krispies with peanuts, raisins and granola. One dinner roll (homemade of course!) with jelly and a glass of orange juice. And don't forget the half of banana! That was my breakfast.
For lunch i had some chickie nuggets (vegan) with some ketchup (homemade) and mustard (also homemade... I'll tell you if i bought it and what brand... just assume homemade), butternut squash, noodles (healthy harvest whole grain) with white bean sauce and a big nice green leafy salad with tomatoes and cucumbers. (I don't put salad dressing on my salads anymore. Just cut that out completely. And to top it off a mini slice of Italian Plum pie. (look at note for about Italian plums)
Supper - 2 pieces of bread, toasted with corn butter, pickles and onions. Also some airpopped popcorn and a pear. Glass of milk to wash it down. I don't like to have much for Saturday night supper.


Note! Italian plums aren't like the ones that you see in the store. They're a bit smaller, blueish colour and have a very nice taste to them. We have a tree in our backyard and we get quite a bit from it. Our refrigerator is very cramped because of the plums and of the tomatoes and peppers that we are now harvesting. Soon it'll be full of apples that we bought to make applesauce with! I'll defiantly be blogging about that.

Hope that was nice and let you guys get an idea of what I eat on Saturday! The weekends can be super hectic (or maybe boring for some of you) and your eating habits may  be going off the side but I encourage you to keep up the good diet and stick with it!

Tofu Eggless Salad Rendition #1

I thought I liked my tofu eggless salad recipe but when i made it today, i really didn't! (don't you hate how that goes? I just guess it makes room for improvement) Here's my rendition of it.

1pgk of firm - extra firm lite tofu
1 T. lemon juice
1 t. garlic powder
1/2 t. onion powder
1/4 t. paprika
1 T. nutritional yeast
2 T. corn butter (i have a recipe on here for that. Just adds a little bit more of yellow)
1/4-1/2 t. salt (to taste basically)

Mash tofu and add in the rest of the ingredients.

So sorry I haven't posted in a while! I'll do lots of posting today! Working on making a vegan minute microwave muffin recipe. the one's online use egg. So far it's not sticking together like I want it to but I'll keep trying. :D
