Crackers and Sickness

Im sick. Headache, achy body, runny nose, stuffy nose, sinus pain and the whole works. I think it may be the flu but i don't have a high temperature. I don't know what i have. I am in the front portion of the book Kidnapped  by Dee Henderson. It's such a good book and it just pulls you in and asks you to read it! So well written! The classload this quarter is pretty light so i have time for things like reading. I'll savor the reading and free times while i can. Anyway....
I decided to play around and see if i could make some saltines. Didn't really work out but i made some nice crackers. Super easy to make and nice with salsa on top.

1/2 c. wheat bran
1/2. c. wheat flour (white or whole wheat, either is fine)
1/2 t. salt
water
preheat the oven to 400 degrees F.
So mix the first three ingredients, then add the water, to make a ball that sticks together. Then you want to roll it out to about 1/8th of an inch. Spray some oil onto the cooking sheet and place the rolled out dough on there. Cut lightly into sections. Get some water and a brush and brush water over the tops and then take a saltshaker and salt lightly. Bake for about 10-15 minutes. I suggest that you set the timer at 10 and then after 10, check it quite often, because after 10 it'll be more likely to burn. Take them off and put them on a cooling rack. Break into pieces when cooled and enjoy!

Bees and Vegans

I thought I'd touch on the subject of bees and vegans, or me in peticular. The reason why i became a vegan is because  first i am lactose intolerant and eggs cause some digestive problems, so eating either dairy or eggs wern't a fun experience for me. I was like since i don't eat meat in the first place, why not just cut it all out? So I was like I am going to challenge myself not to eat dairy, eggs, meat (wasn't really a challenge) and chocolate (oh i can't have chocolate because i am also allergic to it. I can eat carob though. It has to do with the fat content. It makes me have super super bad acne). So I didn't really set how many days i would do this for just to see how long i could last. So far i haven't eaten any dairy, eggs, meat or chocolate. I also don't like eating dairy or eggs because of the ways that they treat the animals making our dairy and eggs. It's really cruel and i don't htink that we should be encouraging? not really the right word, but fudning that business with our money jut to have animals abused. There are so many articles out there about the cruelty to animals when in the slaughter or dairy houses and it's really terrible. With honey, I like to buy local honey because i know where it came from and i don't have to worry about any big plants cranking it out by the thousands of pounds. It just gives me a better feeling to be getting it local and i think it might be cheaper or the same. So that's why i still eat honey and i do believe that honey does have medicinal properties that other syrups don't have like brown rice, maple or agave. I thought I'd put this out here since the previous post had a cough suppressant made with honey and lemon.

Fall + homemade cough suppresant

Hey! Sorry to be leaving in long periods of time like, a week at a time. I know during the summer it was more often but i am really working on recipes! :D I swear i am! Okay, so i just made a recipe for pumpkin pancakes and they were truely amazing and i really enjoyed them. I can't wait to be able to get some of the big pumpkins, not just the ones from cans for cooking. Carving pumpkins are so much fun and you can even use the seeds from the pumpkin as great snaking things! I thought I'd take some pictures from the internet and show you some extreme and awesome pumpkin carvings. :D Thought this one was pretty good. If you take off the outside skin of the pumpkin, that's the lighter part of it. Some people i think have way too much time on their hands, but then again, it's super cool so i can't complain i guess. lol 
Cute idea for people like me who can't do crazy cool stuff. :Dwow? that's really all ican say about this one. Amazing texture and even the whiskers!


I actually think this one is quite beautiful. The differnt colours makes it really nice.

Oh! and it's also getting cold season! so i am sort of sick at the moment. Really isn't fun at all, and my throat is sore. I made some lemon honey stuff and it soothes the throat and also can stop coughing.
You take equal parts of lemon and honey (if you want to, you can stick them in the microwave so they bind together easier) and mix together. then you take it in spoonfulls at a time. I usually make 2 T. lemon and then 2T. honey. Really easy and i think it really helps.
But I hope that you guys can stay out of any bugs going around!
Oh, and i know this isn't vegan but it really does work! I'll post about bees in the next post...

Overrun by Tomateos

So we have about 8 bushes of tomatoes in our garden and it's been freezing pretty hard like in the morning around 6 it'll be 28 degrees. We've been covering up the tomato plants with tarps hoping that it will help since there are still quite a bit of green ones on the vine.
I decided to make some soup out of the tomatoes that we have.

3/4 c. chopped onion
2 c. garbanzo beans cooked
3-4 c fresh chopped tomateos, peeled
2/3 c. tomato juice
seasonings of choice

Sautee the onion in a sauce pan, add the garbanzo beans, tomatoes, tomato juice and the seasonings. Boil for abotu 15 min on medium and serve hot. Goes really well with cornbread.

Congee (Jook)

When traveling around asia, i found that a lot of train stations and other places that sold breakfasts sold a thing called congee in a little metal pop can almost that had a spoon on top. Well, i wanted to make some for a breakfast and found a recipe, tweaked it and added my own toppings. Here is my recipe.
1 cup long grain white rice
9 cups water
1/2 t. salt
put all the ingredients in a pot and bring to a boil. Boil about 5 minutes and then lower the heat to medium or low (just so it won't boil over) and boil it about an hour and a half and then start checking it more often during the last half hour so it won't stick. I had to turn up the heat in the last half hour. Just make sure there isn't any water on the top that hasn't had rice in it (or something like that) so it's all the way through. You're done! Super easy and a great breakfast food.

chopped button mushrooms sauteed with onions

soy sauce
hoisin sauce

Better Blogger +today what i ate

Italian Plums

Wish I could say I was a better blogger, but really, Im not. School has gotten really busy and since i'm in cross country, it's been really hectic going to practices and competitions. It is a lot of fun and I am enjoying it greatly. I still have my camera close to my side taking pictures. :D I just need to upload them and I'm good. You know how that goes though.

Today what I ate?
1/2 c. rice krispies with peanuts, raisins and granola. One dinner roll (homemade of course!) with jelly and a glass of orange juice. And don't forget the half of banana! That was my breakfast.
For lunch i had some chickie nuggets (vegan) with some ketchup (homemade) and mustard (also homemade... I'll tell you if i bought it and what brand... just assume homemade), butternut squash, noodles (healthy harvest whole grain) with white bean sauce and a big nice green leafy salad with tomatoes and cucumbers. (I don't put salad dressing on my salads anymore. Just cut that out completely. And to top it off a mini slice of Italian Plum pie. (look at note for about Italian plums)
Supper - 2 pieces of bread, toasted with corn butter, pickles and onions. Also some airpopped popcorn and a pear. Glass of milk to wash it down. I don't like to have much for Saturday night supper.


Note! Italian plums aren't like the ones that you see in the store. They're a bit smaller, blueish colour and have a very nice taste to them. We have a tree in our backyard and we get quite a bit from it. Our refrigerator is very cramped because of the plums and of the tomatoes and peppers that we are now harvesting. Soon it'll be full of apples that we bought to make applesauce with! I'll defiantly be blogging about that.

Hope that was nice and let you guys get an idea of what I eat on Saturday! The weekends can be super hectic (or maybe boring for some of you) and your eating habits may  be going off the side but I encourage you to keep up the good diet and stick with it!

Tofu Eggless Salad Rendition #1

I thought I liked my tofu eggless salad recipe but when i made it today, i really didn't! (don't you hate how that goes? I just guess it makes room for improvement) Here's my rendition of it.

1pgk of firm - extra firm lite tofu
1 T. lemon juice
1 t. garlic powder
1/2 t. onion powder
1/4 t. paprika
1 T. nutritional yeast
2 T. corn butter (i have a recipe on here for that. Just adds a little bit more of yellow)
1/4-1/2 t. salt (to taste basically)

Mash tofu and add in the rest of the ingredients.

Okay i take that back

I take what i said back about journaling. I think it's still too much out of my comfort zone for the moment but i will try and do today's... for breakfast... to get an idea
 and also because i have super hectic days i can't even really remember what i had for breakfast.... 

Vegan Almond Cheese

Here are my selection of ingredients. I have my measuring cup with warm water, the almonds in the tin, salt, agar powder, (frozen) red pepper, nutritional yeast and onion powder. I put the water and the agar in the blender together and they made a gel and then i added in the rest of the ingredients. 

make sure you blend it long enough to make sure it has a nice consistancy. this one came out fairly gritty but i have some that comes out much better. I'll post some pictures about that. 

I stuck it in a molding dish and put it in the refrigerator. It turned out fairly nice. I  added some more agar the next time that i made it and put it in a mini bundt pan. It came out in a nice mold and it worked great on the crackers with soup.

Recipe:
1 c. hot water
2 T. granulated Agar
1 C. almonds, slivered, blanched

1 t. salt
1/2 t. garlic powder
2 T. nutritional yeast flakes
1 t. onion powder
1 1/2 T. lemon juice
1/4 bell paper, red, chopped

This is the cheese when it's in my refrigerator. :D
1. blend together the hot water and granulated agar for a few seconds. Add all the ingredients except for the almonds and blend for a bit. Then add the almonds to get a nice smooth texture. Blend for a while to make sure it's nice and smooth and not chunky. Pouru into a container or mold (i used a mini bundt pan a) refrigerate until it's firm. 

Gnocci

Gnocci is like a pasta almost but not really... it's a combo between a potato dish and a pasta. Fortunately this pasta is super simple to make.

3 medium (1 lb) potatoes washed
1 t. salt
1/4 t. seasoning of choice
1/4 c. soy yogurt or milk
1/2 c. plus 1-2 Tbs flour

1.wash the potatoes super well and put them in a pot. Cover it with water and add the salt. Boil the poatoes about 30-40 minutes until they're cooked all the way through. Poke them with knife to check. Put them on a surface and pull the skins off them. You can wait for them to cool, pull the water off under some running water of you can do it like i did and suck it up. :p
2. The recipe that i used said to put them through a potato ricer. A potato ricer is like a big press that will press the potato super fine. I didn't have that and i couldn't press it though my seive, it was too small. So what i did was mashed it with a fork and then beat it with a baking beater thing. It made it nice and fluffy so i think i got what was wanted.
2.5 boil a big pot of water for cooking the "pasta"
3. Add the seasoning and yogurt to the potato and then put in the flour. you might need to add some more flour to be able to knead it. Knead out the potato mixture on a floured surface for a few minutes. Add flour when needed. Divide into small parts and make about 3/4 inch thick and 18 inches long. Cut into about 1/2 inch long pieces. Roll them into nice little balls ish.... After you've cut about half to 1/4th of the gnocci, put them into the lightly boiling water. If the water is  boiling to hard, it will break the gnocci. The gnocci will go to the bottom and when they float, they'll be done. When they're done, take them out with a strainer spoon and put them in a dish.
4. You can eat gnocci with stuff on it, i prefer to eat it like a little side dish with tons of veggies. :D

Dehydrating Apples

I used red delicious apples. They're a very nice and pretty apple. Also one of the cheeper in the store.... lol
This is my trusty food dehydrator. In this picture, it doesn't have all its layers on it buti think it has about 3 more?

So slice the apples into 4ths and core them. Then slice them into thin slices and lay them on the dehydrator. Dehydrate them over night is what i do or until all of them are nice and dry. You don't want to go too thick or too thin. If you want them to keep from getting brown looking, you can dip them in lemon before they dry.

Back To School and Journaling

For the moment, i have decided to do some journaling on here for you to get an idea of what I eat in a day or daily in about a week. I'll come on every evening or try to and write up what I've eaten. I'm trying to eat as clean as possible.

Oh, and I wanted you to know that I am going back to school so if the meals sound kinda "weird" that's probably why. I have to fit it in my itty bitty lunch box. But that's okay, the lunch box is super cute! So for starters, I'm going to log what i ate today.

Sunday
Breakfast - 2 waffles* with almond butter and jelly. A 6oz glass of orange juice
Lunch - Gnocci ( I will try and puut up this recipe very soon!) with some beans, swiss chard and a big helping of salad, and for a drink ; soymilk.
Supper - 2 pieces of bread with corn butter*? and a slice of turkey inbetween, mini slice of pineapple pie and a 1/6 of a round of watermelon. With some soymilk too.
* means on the blog!

I hope this helps to give people an idea of what i eat in a day and I will try to add some mroe recipes, i just haven't gotten around to it. :D I promise i will, very soon.

Layered Taco Salad

My apologies for the late post on this blog. It has fallen to the side when i traveled to Hawaii. We at amazingly good papaya and mangoes there and ice cream bananas! They're a greyish green when they're not totally ripe. I think the reason why they call them ice cream bananas is because they have a creamier texture than regular bananas. It's also called the Blue Java Banana.
anyway. here is a recipe for a quick and easy taco salad. it's a nice thing to take to a tailgate party or to eat as a one dish meal.

1 c. baked tortilla chips
1 (15 oz) can black beans, rinsed and drained
1 jar of salsa (whatever heat you want)
1 c. pressed tofu shredded with 1 T. nutritional yeast (like cheese)
1-2 c. shredded romaine lettuce
1 small onion diced
2 dollops (being very exact here!) of sunflower sour cream


In a mixing or serving bowl, put the baked tortilla chips at the bottom of the bowl to cover the bottom. Then put in the black beans to cover the chips and pour in the salsa to cover that, not too thick though. Depending on the bowl, the measurements might be different. Sprinkle in the pressed shredded tofu and the shredded romaine lettuce. Dice up the onion and sprinkle that in there to and put some (2) dollops or spoonfulls of sunflower sour cream on the top to top it off. Eat it like a regular salad but don't toss. If you have it in a clear bowl, besure to have the layers nice and neat.

How to become a vegetarian? part 1

How to become a vegetarian? Well, this isn't an easy journey to become a vegetarian or a vegan. For beginning, i should lay out the difference between a vegan and a vegetarian.
A vegan is a person who doesn't eat any animal products, be that meat, milk, eggs, cheese, honey any other dairy product.
A vegetarian is a person who doesn't eat any meat or fish. They do eat eggs and milk and honey though because no animals were killed in the progress.
First, i should put out that you should become a vegetarian before you become a vegan because it's super easy to get bogged down and totally quit the diet. Veganism is getting more popular in restaurants and you can find vegan restaurants all around cities. Even the small city that i live in has 4 vegan restaurants. It's pretty cool. There are so many resources for people starting a vegan/vegetarian diet. There are fake cheeses (almond and soy), cream cheese, sour cream, and tons and tons of milks. It's so easy to find something at your local whole foods/trader joes and even walmart.
There are also a lot of fake meats. Tofurkey, Loma Linda, Yves, Morning Star, and so many other tofu products that are like turkey, baloney, and other meats. Loma linda and ceder lakes have a very nice collection of fake meats.

Dole's Peanut Butter Cookies

I was looking through the dole cookbook and actually found a fairly healthy recipe! Check it out! It uses Adam's natural peanut butter!  I did a few changes but here it is!

1 banana
1/3 c. peanut butter
2 T. apple sauce
1/2 c. sugar
1/2 c. brown sugar
1 fake egg
1 1/4 c. all purpose flour
3/4 t. baking soda
1/4 t. salt
1 T. granulated sugar

Set the oven to 350. Mix banana, peanut butter and apple sauce in a bowl. Mix it up really good. Might help to warm the peanut butter. Add sugar, egg and mix. Add the flour, baking soda and salt. Drop by teaspoon fulls onto a baking sheet.. Sprinkle with sugar and press with a fork to make a criss-cross pattern. Bake 10-12 minutes.

makes about 36 cookies

Vegan (no egg) biscotti

It's hard to find a vegan biscotti recipe, but i did find one and made some changes to it. I can't find the recipe any more but here it is.

2 c. flour
3/4 c. ground almonds
3/4 c. whole almonds
3/4 c. sugar or 1/2 c. sugar, depending on what you like
1/2 t. baking powder
1/2 t. salt
1/3 c. honey
1/2 t. cinnamon
1/3 c. water
1/4 t. almond extract.
Set the oven 350.
Mix together flour, sugar, whole almonds, fine ground almonds baking soda, baking powder, salt and cinnamon. In a separate bowl blend honey, water and almond extract and add to the dry. Turn dough onto a floured surface. Divide into half and make into logs. Place logs on a greased sheet (i used airbake) and bake for 30 minutes. Take out and let cool 10 minutes. Then cut with a serated knife into slices. Put back on sheet and bake 15 more minutes. Put on racks to cool.

Staying Healthy Secret

Here's a little secret that i learned on how to save some oil and time! I love to eat sandwiches that are grilled. I can admit that, totally, but i can't stand how much oil is on them! So what i like to do in the evenings, is to take two pieces of bread that i am going to use for my sandwich and toast them. Then i make it like a regular sandwich. It has the same crunch or hardness to it that grilled sandwiches do but i don't have the oil in it that it takes to fry it! It's a really nice because it takes less time and you can do both 'sides' at once!

Camping Meal Plan

Last weekend, we went camping, and i mean camping, not backpacking. I did the meal plan so i thought i would share with you what i did for the meals.

Friday Supper - i chose to have some pea soup, with cornbread muffins, and cornbread muffins. We had some melon and bananas for our fruit.
Saturday Breakfast - I was lazy and had us eat the good old oatmeal packets for breakfast. We had some bread with it.
Saturday Lunch - when we got back into camp from our 8 mile hike, we were exhausted, so we sat down to some polenta with black beans, lettuce, salsa, olives,  Guacamole , and basicly taco toppings. We had biscotti for our dessert.
Saturday Supper - We had some lettuce wraps with hamburgers filled with the Gardenburger's Black Bean Chipolte burger inside. It was an amazing supper!
Sunday Breakfast - We had pancakes with the normal pancake toppings and some random fruit. we also decided we'd eat up what ever would be acceptable on pancakes that meal too. :D
